Easy to make Turkey Chili with Sweet Potato Tortilla Chips

Even though winter is playing all of us, this is a easy meal to cozy up to on a chilly night.
2 tablespoons canola oil
1 pound ground turkey
2 cans (10 oz. each) diced tomatoes with green chiles
1 can (15 oz. each) whole kernel corn, rinsed and drained
2 cans (15 oz. each) black beans, preferably reduced-sodium, rinsed and drained
Can opt for 1 can of black beans and 1 can of red beans
Chili powder - season to taste
Ground cumin - season to taste
Crushed red pepper (optional)- season to taste
Garlic & herbs (optional)- season to taste
Shredded four cheese - Mexican (optional)
1. Heat oil in a large pot over medium-high heat. Add turkey and increase heat to high. Cook meat, breaking it into chunks until no longer pink. Stir in spices during this 4 to 5 minute period.
2. Stir in tomatoes, beans, and corn. Cover and bring chili to a boil, stirring often. Reduce heat and let simmer, stirring occasionally, until flavors are blended. Do this for about 45 minutes. If you like, add crushed red pepper and garlic to taste and serve with four cheese blend or your favorite shreed cheese.
3. Pair with tortilla chips (The brand used here is gluten free!).
